Fall is finally in full effect and I'm milking every moment of it. One of my favorite things? Cozy nights in with some warm, home cooked grub. This recipe has made it's way into the dinner rotation because
A) It's delicious B)It's super quick and easy. Here we go!
1. Spray medium pyrex with cooking spray and lay two overlapping flour tortillas.
2. Spread pinto beans on top
7. Slather top layer of flour tortillas with Trader Joe's Salsa Authentica.
10. Top with sour cream and avocado.
Use whole wheat tortilla
Don't use refried beans
Use only a little, or lite cheese. I really like Trader Joes Lite Cheese Blend.
Skip sour cream, or use light.
This recipe is great with a side of spanish rice and/or a fiesta style salad.
