MEXICAN.bake.

Fall is finally in full effect and I'm milking every moment of it.  One of my favorite things?  Cozy nights in with some warm, home cooked grub. This recipe has made it's way into the dinner rotation because 

A) It's delicious B)It's super quick and easy.   Here we go!

Ingredients: 
Flour Tortillas
Pinto Beans
Shredded Chicken
Shredded Cheese
Sour Cream
Avocado


1. Spray medium pyrex with cooking spray and lay two overlapping flour tortillas.

2. Spread pinto beans on top
 3. Layer shredded chicken on top of beans. (I cooked my shredded chicken with some onions and tomato.)
 4. Sprinkle a little bit of cheese on top.
 5. Layer two more flour tortillas on top.
 6. Repeat steps 2-5 on top of tortillas.
7. Slather top layer of flour tortillas with Trader Joe's Salsa Authentica.

 8. Sprinkle top with Cheese.
 9. Bake in oven at 350 degrees for about 20 minutes.
10. Top with sour cream and avocado.

ENJOY!
 

Ways to make this recipe healthy:
Use whole wheat tortilla
Don't use refried beans
Use only a little, or lite cheese.  I really like Trader Joes Lite Cheese Blend.
Skip sour cream, or use light.

This recipe is great with a side of spanish rice and/or a fiesta style salad.

  4. Sounds right up my alley! We finally made it over to the new Miguel's that opened on 17th Street yesterday and I was in pure heaven. Sunday is always a good night for Mexican food I say!
